Well, here’s one for the “Hey, that came out pretty good!” file.

Went home for lunch today.  Hungry.  Didn’t have anything planned.  I’ve been slacking on my grocery shopping lately too.  Uh oh.  This could not turn out well for the home team.  With the home team in mind, I asked myself, “What would TB12 do?” I can say with certainty what he would NOT do: go for the fast food drive thru, scarf down the salt & vinegar chips that the teen agers in the house eat, skip eating altogether, be cranky  and set self up for huge binge later.

So what did I do?  Played kitchen sleuth.  I found the following:

  • leftover grilled corn on the cob
  • can of organic black beans
  • can of tomatoes with green chile
  • can of tuna
  • you get where I am going with this…
  • an avocado nearing its last days
  • limes!

Cut the kernels off the cob.  Throw them in a bowl with everything else.  Add some cumin, garlic, salt, pepper and a little apple cider vinegar.  In less than 10 minutes, I had a delicious, fresh bowl of clean goodness.

So, here’s the point:  it doesn’t take long to put together a simple and healthy meal.  You don’t need to go all gourmet.  Chef Ramsey is not coming over.  Keep some healthy staples in your pantry, have an open mind, and be patient.  Embrace your creativity! Drink a glass of water while you’re creating your dish, so you don’t eat an entire meal before your meal by snacking on stuff.
